Black Whole Ham - Sweet Cure
Sweet pickled whole ham.
The curing, marinading and smoking of our hams takes 10 weeks.
As these hams sit in the marinade for 6 weeks the flavour of the ham can be sweet and quite strong whilst the texture can be coarse and slightly dry.
Occasionally due to demand we sell out!
Being a hand made product ham weights vary.
Vintage Velvet (with port wine) and Cider Pickled hams, which are available just at Christmas, prices as sweet pickled.

Black Bacon - Sweet Cured
Traditional Suffolk black back and streaky bacon. Like our hams the marinading process takes 6 weeks prior to the bacon being hot smoked over oak.
All bacon is sliced using an 80-year old hand operated Avery Berkel bacon slicer. Can be sliced to thickness required.
1 kilo = approximately 4 x 250g packets.
Smaller quantities will be sent by post (1-2 packets), larger quantities will be sent by courier (up to 30 kilos £8.95).

These are taken from our sides of bacon. Can be used to make soups or cooked as ribs under the grill or on the barbeque. Also string a small game bird to the ribs and cook in the oven
