A gift box containing an approximate 2.5kg piece of our famous suffolk black uncooked gammon, unwaxed oranges, naturally dried apricots and naturally dried prunes coupled with a cooking bag and string!
Cut in half the oranges and squeeze out the juice and cut the peel into edible size pieces. Carefully open the cooking bag and pour in the juice and make a bed with the orange pieces along with the apricots and prunes. Place the cut side of the gammon into the cooking bag on top of the fruit and place the whole bag onto a roasting tray. Tie the opening with a piece of string and place in a heated oven.The cooking time depends upon the size of the gammon and the oven temperature. As a general rule 20 minutes per lb/45 minutes per kg at 180°c. The centre of the ham needs to reach 71°c.
Once cooked one can either eat the gammon hot or cold.
If serving hot carefully cut open the bag. Remove the gammon and place onto a chopping board and the fruit into a separate bowl using a spoon. If serving cold leave the cooking bag in the roasting and once the tin has cooled place in a fridge until the next day.
